A spin on the classic scallop potatoes! Made with thinly sliced potatoes and butternut squash in a rich smoked cheddar mornay.

Drop in simmering water for 5 minutes to cook from frozen or thaw overnight, unwrap and bake in a 350F oven for 12-15 minutes to get a golden crust on top.
